Pumpkin Pancakes with Cinnamon Butter

I was casually watching Gilmore Girls (as we all do come Fall) and when I heard Luke say “Pumpkin pancakes with Cinnamon butter” I knew I had to make these! I tested numerous recipes and I even made my own buttermilk and butter from SCRATCH! But do you want to know which ones turned out the best? Good ol’ fashion Aunt Jemina! And I didn’t want to gate-keep the fact that all you need to do is add pumpkin pie spice and 100% pure pumpkin puree and you will have the most delicious pumpkin pancakes. Work smarter, not harder!

Recipe for Pumpkin Pancakes with Cinnamon Butter

Ingredients:

(Makes ~10 pancakes)

  • For the pumpkin pancakes:
  • 2 cups of your favorite pancake mix (I used Aunt Jemina buttermilk)
  • 1 1/3 cup buttermilk
  • 1 tsp pumpkin pie spice
  • 1/2 cup pure pumpkin puree
  • For the cinnamon butter:
  • 1/2 cup butter (softened)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 1/4 tsp cinnamon

Preparation:

  1. For the pancakes, combine all the ingredients and whisk until a smooth batter forms. Set aside while you make the butter.
  2. For the cinnamon butter, in the base of a stand mixer or a large bowl with a hand mixer, whip the butter until smooth (about 3-5 minutes on medium speed). Add to a piping bag and place in a cool place until ready to use.
  3. Add butter to a skillet and cook the pancakes until golden brown on each side.
  4. Serve with cinnamon butter and syrup. Enjoy!

Notes: Of course, you can switch up the amounts of the pancake mix to milk ratio based on how thick you like your pancakes and also depending on what brand you are using, this could differ! This recipe makes quite thick pumpkin pancakes.
